ದುಂಡುಗಲ್ಲು (Dundugallu)
The Dundugallu is a traditional flat stone grinding implement that has been used in Karnataka for centuries to prepare fresh spice pastes, chutneys, coconut-based preparations, herbal mixtures, and medicinal compounds. It consists of two parts: a
broad, flat granite grinding slab and a cylindrical or oval roller stone, both carved from naturally occurring granite found across the Deccan Plateau. The upper surface of the grinding slab is slightly concave due to years of continuous use, while the roller stone is smooth and rounded, allowing it to move easily back and forth over the ingredients. In Kannada, Dundu means “round,” referring to the shape of the roller stone, while Rubbu means “grinding.” During use, ingredients are placed on the flat stone and ground by rolling the cylindrical stone over them, producing a smooth, even paste that preserves the natural oils, aroma, and flavour of spices and herbs far better than modern electric grinders.
The same type of stone was also traditionally used in Ayurveda for preparing herbal medicines and medicinal pastes. The
Dundugallu formed an essential part of daily household life, particularly in rural Karnataka, where it was used every morning for preparing fresh ingredients for meals. It was also considered an important household object during festivals, religious ceremonies, and wedding feasts, where freshly stone-ground ingredients were valued for their authenticity and superior taste. More than a kitchen utensil, the Dundugallu symbolizes Karnataka’s rich culinary traditions, sustainable food preparation practices, and the ingenuity of traditional craftsmanship. Although it has largely disappeared from everyday use due to the widespread adoption of electric mixer-grinders and food processors, it remains an important cultural artifact. Preserving the Dundugallu in a college museum helps safeguard Karnataka’s culinary and domestic heritage, enabling future generations to appreciate the traditional knowledge, craftsmanship, and way of life that shaped the region’s history.
